Biogas in the open kitchen at Yes Yes Yes

High cooking temperatures narrowed the choice to gas or wood

The Yes Yes Yes vegetarian restaurant in Punavuori, Helsinki, uses Finnish biogas throughout its kitchen. Gas is used in the open kitchen’s tandoor oven and Japanese Robata charcoal grill.

“The temperatures we use for cooking are high, so gas or wood are the only options suitable for our equipment. Burning wood was not possible because of the flue system, so biogas was a natural choice.”

The owners chose biogas because they already had experience of using it as a vehicle fuel.

Existing gas pipes in the property made installation easier. Pipes were extended to the open kitchen. Granroth emphasises the importance of learning how to use the gas equipment and shut-off valves.
